So I originally sponsored one child and did the additional giving $25 for her birthday and $50 for Christmas. I am now sponsoring two children and need to adjust my payment plan to accommodate. My income has not changed and I am returning to college for two more years. My question is if I give them each $25 on their birthdays (totaling $50) and was unable to do the additional giving at Christmas, would they still receive some sort of Christmas present?

Yes they will :)  The Birthday gift goes to your child, but CHristmas gifts go into a gift fund and provides a gift for all Compassion kids sponsored or not, since it's divided for all the kids, your children will still get Christmas gifts :)
