I've read some conversations on the site that refers to their letter being "in translation", "received" and "view" status. Where and how is it that we can see this status? I wrote a letter to my sponsored child and it currently gives me the option to "view" with an envelope icon.....what does this mean exactly? How do I know when my child has received my letter?

The status bar shows up on "write your child" page.  Right now, I wouldn't worry if it's there or not there (some countries like Kenya it's not showing at all).  The new letter writing system is basically broken at this point, and most of the letters are being pulled off, and handled manually.  For those of us that are long time sponsors, we have letters sitting in the status bar from months ago, and hopefully at some point they will be processed.  You aren't going to know exactly when your child receives their letter.  It was usually about three months, and I guess because they are going back to the old way of doing things, we are again being told about three months.  If you aren't a member of the Compassion fb group, you might want to ask to be added.  The social media ladies are now giving up updates on there as to where the new system is at.
