Do children have access to crayons, or other art supplies for the coloring sheets that we would send?

Would it be inconsiderate to send kids pictures of my parrot and tortoise? In some countries wouldn't they be considered food?

Each project will have a different variation of supplies, but they all should have some sort of art supplies available as the children take part in art or crafting.
I don't think there is any harm in sending pictures of your pets. I send pictures of my dog and cat and I know that they are considered edible in some countries. :)

I am going to send coloring pages and paper dolls. How can I know if my child has crayons and scissors in order to play with these things?
