On the profile of the child I'm sponsoring it has a spot called last correspondence date. Is that the last time my child has been contacted? I'm not sure what it means. I just sponsored her, so I haven't written any letters yet, so it can't mean the last time I have corresponded with her.

It could mean the last time she wrote a letter then.  I find the last correspondence date can mean either from me to her or from her to me (which in this case would be the new sponsor letter. In some countries/centers they write that before they even have a sponsor, to have it ready to go out.

Hi McKenzie! Your sweet little girl has never been sponsored before so that last correspondence date is actually the date we sent stationary to the center when her enrollment in the program was activated. We would have sent that stationary immediately so that she could get a letter written when she became aware she had a sponsor. Thank you so much for choosing to sponsor her, and I cannot wait for you to hear from her :).
